A new MM 300 lyophilizer was officially handed out today to the Association of artisan cheese producers, September 26, 2025, in Novi Sad. This state-of-the-art equipment was procured within the project “Pannonian Superfood — Implementation of innovative food processing technology in artisan cheese production”, implemented through the Interreg VI-A IPA Croatia – Serbia 2021-2027 Programme, and represents the most significant investment in the dairy sector of both countries.
During the trial run, it demonstrated excellent results in the lyophilization of cheese, whey, and milk – with a moisture content below 2% and water activity below 0.2. This technology provides opportunities for the development of new premium milk products.
Within the project, two associations of artisan cheese producers have been established. These associations closely cooperate in applying new technologies and improving production. The project also foresees the development of ten pilot products, combining tradition and innovation in premium dairy production.
During the project implementation, small producers from Serbia and Croatia took part in an intensive training programme, including a study visit to producers in Italy as well as close collaboration with leading experts in cheese-making technology and premium food export. These activities have significantly strengthened producers’ capacities to modernize their operations and enter demanding international markets.
In just a few days, a similar facility will also be inaugurated in Osijek, further highlighting the importance of cross-border cooperation and joint efforts in modernizing and internationalizing the dairy sector.
The total value of the equipment amounts to EUR 162,710.00, while the total project budget is EUR 448,559.00 (with EU co-financing of EUR 381,275.15). The project runs from July 1, 2024, until December 31, 2025.
