Within the framework of the project Milkyway – Pannonian Super Food: Advancing Artisan Cheese Production with Innovative Technology, a new freeze-dryer, valued at EUR 155,000, was put into trial operation.

During the trial cycle, the equipment supplier successfully freeze-dried approximately 300 liters of whey, and samples were taken as part of the verification and equipment acceptance procedure. In addition to the main equipment, complementary equipment – ramps, trolleys, and trays – worth EUR 8,000 was also delivered, ensuring full functionality and efficiency of the process.

This state-of-the-art technology will serve all members of the two associations of artisan cheese producers established in Serbia and Croatia under the project. By procuring the freeze-dryer and complementary equipment, producers are enabled to introduce innovative methods in milk processing, preserve nutritional values, and develop new products.

In the final stage of the project, a test production of ten different products is planned, using the equipment acquired for both associations. Following the acceptance of the equipment and the training of Association representatives, a promotion of the modern facility is scheduled for the end of September, where the first trial products produced with the new technology will be presented.
